In the Russian Mennonite community on the Canadian prairies – the community I grew up in – star anise was always part of the seasonings in traditional chicken noodle soup – together with a cinnamon stick, whole black peppercorns, and sometimes bay leaf.

So when I first tasted pho, there was something very familiar and comforting about it. I couldn’t figure out what it was until I found a recipe for pho – aha – star anise, cinnamon, and bay leaf!
